Autumn Green Tomato Pickle

Description

This is a new spin on our first batch of green tomato pickles which were a HUGE success. It still has the wonderful acidity of the first batch but is not as hot. This time we included some dried ancho chiles which are very low on the scoville heat scale and impart some lovely flavour notes.

The brine is simply sublime and has lots of uses:

  • Sautée fresh greens and add a splash of brine at the end.
  • Mix it into a salad dressing as a partial replacement for salt and vinegar.
  • OR you could add it to a Bloody Mary to make it extra special!
