Our umami quest continues. This one features slow roasted new season brown onions from Rocky Top Farm. It’s a good one!
If you’re wondering how to use Shio Koji, think of it as a “very salty stock”. You can us it instead of salt in a range of ways, including:
- Pasta Sauces
- Sautéed Greens
- Salt curing and marinating (look up Shio Koji Chicken if you’re a carnivore)
- Salad dressings
We use it al least 5 times a week!
Our Shio Koji products are between 15-20% salt. So if you have a recipe calling for, say, a teaspoon of salt. Then try 2 teaspoons of our Shio Koji instead.
