What is it with nightshades and fermentation. I tell you what green tomato, and tomatillo have so much souring potential it’s hard to believe.

This one is for those who have been holding out since last season’s epic green tomato pickle. This recipe is very much derived from the original recipe but has tomatillos instead.

It’s strong and sour with some great savory notes and a healthy portion of heat. A little goes a long way.
