Description

This is a non-spicy kimchi. We made it to give our mild-box members more variety.

This kind of kimchi is called “baek” or white kimchi. It’s a lot milder and less pungent than the red varieties.

We’re really happy with how this turned out. It’s is light, refreshing and relatively low in acidity. We love it with light and simple green salads. The occasional hit of lactofermented apple adds a lovely sour hit to complement the sweeter wombok.
